Here, Revo Foods employs its proprietary 3D structuring technology to produce alternative proteins featuring \u201cinnovative textures and new functionalities\u201d on an expansive scale.<\/p>\n<p>Key components such as nutrient density, texture, flavor, and production scale are essential in the competition to deliver alternative proteins that can rival the outputs of traditional animal agriculture.<\/p>\n<\/p>\n<p><p>When operating at maximum output, the facility&#8217;s monthly production capacity reaches 60 tons of alternative proteins. Utilizing 3D structuring technology, it can create intricate mixtures of fat and protein that mimic the tender, juicy, and nutrient-rich layers found in high-quality plant-based meats.<\/p>\n<\/p>\n<p><p>The new plant-based salmon from Revo Foods, called The Filet, has earned an impressive Nutri-Score of &#8220;A.&#8221; It&#8217;s rich in protein and enhanced with omega-3 as well as vitamins B6, B9, and B12. In addition to being high in fiber, The Filet is free from cholesterol, sugar, and gluten. As described by Revo Foods, it features &#8220;delicate layers&#8221; that separate easily during baking or frying, much like real fish.<\/p>\n<\/p>\n<p><p><strong>Discover more: <\/strong><a href=\"https:\/\/plantbasednews.org\/news\/tech\/technology-turn-the-world-vegan\/?utm_source=relatedlink\" rel=\"nofollow noopener\" target=\"_blank\"><strong>The Technology That \u2018Could Turn The World Vegan\u2019<\/strong><\/a><\/p>\n<\/p>\n<p><p>Earlier this year, the Vienna City Council filed a case against Revo Foods for allegedly &#8220;misleading&#8221; consumers with its initial <a href=\"https:\/\/plantbasednews.org\/news\/alternative-protein\/worlds-first-3d-printed-vegan-salmon-europe\/\" rel=\"nofollow noopener\" target=\"_blank\">pea protein-based salmon<\/a> offering, but the court ultimately <a href=\"https:\/\/plantbasednews.org\/news\/alternative-protein\/lawsuit-revo-foods-plant-based-salmon\/\" rel=\"nofollow noopener\" target=\"_blank\">dismissed<\/a> the case.<\/p>\n<\/p>\n<p><p>\u201cWe regard this as a significant achievement for innovations in plant-based products,\u201d stated Revo Foods CEO Dr. Robin Simsa in a comment to <em>Plant Based News<\/em> (<em>PBN<\/em>). \u201cThe current legal challenges faced by plant-based companies highlight that vegan items are becoming serious competitors to traditional animal-based products in the food industry.\u201d<\/p>\n<p>Revo Foods describes its new mycoprotein-based vegan fish as being merely \u201cinspired by\u201d salmon. This Fillet will hit the shelves of European supermarkets starting October 3, 2024, including over 1200 REWE stores.
